Four times a year, our beer director — a Cicerone-certified drinker who has been on staff since 2010 — sits down with the list and rebuilds four lines at a time. The rest of the board holds its place until a keg kicks or the season turns.
The goal is not to chase trends. It is to keep a board that a regular could drink across in a week without repeats, that a first-timer can read in a glance, and that, in any given month, leans on Ontario producers we know by name.
- Local first. Wherever a Northern Ontario or provincial brewery can carry the line, they get the tap.
- Style range, not volume. A pilsner, a pale, an IPA, a stout, a sour, a lager — always a balanced set.
- Drinkability over hype. We pour what people come back for, not what trend pieces chase.
- One quiet wild card. Every rotation includes one line that doesn't quite fit — that is the point.

Eight new lines, four new Ontario breweries.
A pilsner-heavy board built for the patio: three German-style lagers, two fruited sours from Guelph, the return of the Sleeping Giant Dark Ale. The mid-quarter swap brought in Half the Guitars' DIPA and Manitoulin's first-ever lager on tap.

The season we leaned into pale ales.
Six of the 24 lines were variations on the pale — American, English, Belgian, and one boldly under-attenuated "house pale" brewed exclusively for the pub by Stonecutter. Stout and porter positions held for shoulder-season drinkers.

A stout-and-lager board for cold Tuesdays.
The shortest ABV spread we have ever programmed: nothing under 4.8%, four imperials over 8%, and a Black IPA that quietly became the best-selling line of the quarter. Northern Ontario producers took 6 of 24 taps.

Spice, cellar-warm ales, and one mulled cider.
The annual December board, built around what drinks well coming in from the cold. Three spice-driven winter warmers, two cellared barleywines, and a non-alcoholic mulled cider that the team has quietly refused to take off the board since.
